Eating habits in different places

I’m from Querétaro, but two years ago I moved to Mérida city. All this time I have seen many cultural differences among the two cities. The gastronomy is one of the most evident, unlike Querétaro in Yucatán the food is more spiced and there are more pork meat dishes, like the popular "Frijol con puerco".
In contrast, people in Querétaro consume more chicken and beef meat, the pork is typically consumed on weekends or parties in a popular dish named "carnitas".Another difference is the use of turkey in more than one dish, like Sopa de lima, panuchos, salbutes, pavo asado, etc., in Querétaro we only have "Mole de Guajolote".
I think that yucatecan food diversity is due to an influence and mixture of mayan, libanese and spanish cultures, among others in the peninsula region.
